WHY ROYAL QUINOA?
We work with Royal Quinoa which has some differences from regular Peruvian Quinoa. Royal Quinoa is only grown at around 12,000 feet above sea level in the areas surrounding the Salar de Uyuni, the dry, arid salt flats of the Bolivian Altiplano. This particular region in Bolivia has extreme harsh weather conditions and intense seasonality, making this crop incredibly durable. The result, a truly larger rounder seed, that tastes nuttier and fluffier (once cooked) than any other quinoa varietal.
Commercially, Royal Quinoa grains are bigger than Peruvian Quinoa grains. In comparison, we have 2.2 mm in diameter for Royal Quinoa and up to 2 mm for Peruvian Quinoa. This is highly appreciated by consumers because in terms of volume and presentation, 1 Kilo of Royal Quinoa is greater than 1 Kilo of Peruvian Quinoa. Once the Royal Quinoa is cooked, it increases its size and therefore, there are more servings than Peruvian Quinoa. This is one of the main reasons why the French cuisine considers it a gourmet food. Its taste and texture are a trademark for Bolivia just like the Champagne is for France or the Coffee is for Colombia.
